What Is The Clover Club Cocktail Recipe?

The Clover Club is a fruity, tart and silky cocktail which demonstrates how well-suited raspberries and gin are in cocktails. The cocktail is very old, with origins in the 1800’s, that was an antidote to the plethora of short, strong booze-forward cocktails that were knocking about at that time.

Egg whites are a red flag for many in cocktails and are often dismissed out of hand but please be open-minded. Egg whites in cocktails add a texture and mouthfeel that can’t be replicated as well as producing a velvety foam on cocktails when shaken up. You will not taste egg we promise, please give it a whirl. That said, it’s an optional extra so not mandatory.

As we have mentioned before, dry shaking (shaking without ice) egg white is the bartenders choice when making cocktails with this ingredients before a follow up wets shake (with ice).

How to Make The Clover Club Cocktail Recipe

Ingredients

50ml Gin

25ml Lemon Juice

12.5ml Sugar Syrup

1 Egg White

4 Raspberries

 

Method

Add raspberries to the bottom of a shaker and muddle. Then add the gin, lemon juice, egg white and sugar syrup to a shaker and shake for 10 seconds. Add ice to the shaker and shake for 5-10 seconds. Strain the shaken cocktail into a chilled martini glass. Garnish with 3 raspberries on a cocktail stick.
