What is the Rum Spumoni cocktail recipe?
Spumoni is a popular drink Japan where it’s usually served as a low alcohol cocktail.
The original is made with grapefruit juice, tonic water, and a small amount of Campari.
It’s a drink full of citrus thanks to the grapefruit, with the tonic and Campari adding a bittersweet note.
In other words, it makes for the perfect early-evening cocktail.
We took inspiration from bartender Jon Mullen from the USA who took the original Spumoni recipe and added gin.
However, we thought an aged golden rum would bring a nice element of flavour to complement the grapefruit and tonic.
We picked Rosemullion Distillery’s Golden Rum from Cornwall.
Carefully oak-aged, it has a smooth flavour perfect for sipping.
On the nose it’s tropical, with hints of slightly overripe tropical fruit, along with floral flavours and a lovely citrus lemon and lime aroma.
