25ml The Oxford Artisan Distillery Vodka
25ml Raspberry Liqueur
10ml Sunnyhill Apple Cider Vinegar
4 Rectory Farm Strawberries
6 Mint Leaves
Elderflower Presse

Method

Muddle three of the strawberries in a shaker. Add the spirits and cider vinegar, top with ice and shake for 10 seconds. Add the mint and give a light shake to bruise the leaves but not break them. Fine strain the ingredients into a highball glass with cubed ice and top with elderflower presse.

PRO TIP

One of the key flavour balances is that of sweet and sour, which is generally achieved with citrus and a sweetener.

To overcome the fact that citrus fruit is not a particularly sustainable option for balancing flavour here in the UK, we instead opted to use cider vinegar to act as our sour balance.

Try using vinegar in your cocktails, they bring an added complexity to cocktails and work really well as a substitute to citrus in some cocktails. Go easy though, vinegar contains far more acidity so be sparing.

We wanted to source all of the ingredients from within 20 miles of our offices to showcase that it’s easier than you think to create cocktails with all of the ingredients bought locally.
